This week, we spoke to Brooklyn-based pastry chef and recipe developer Caroline Schiff, aka @pastryschiff. The James Beard Award nominee, who recently released first cookbook, The Sweet Side of Sourdough, makes some of the most celebrated sweets in the city at Gage & Tollner, where she is Executive Pastry Chef, and, for a limited time, at The Good Batch, where she’s doing a lemon bar collab through August.
